Back to School: 5 Quick and Healthy Breakfast Ideas!

Blueberry muffin ingredients and recipe:
6 tablespoons butter, softened
3/4 cup sugar
2 eggs
1/2 cup milk
1 teaspoon vanilla extract
1 cup all-purpose flour
1 cup whole wheat flour
1 tablespoon baking powder
1/4 teaspoon salt
2.5 cups blueberries, washed and stems removed

Recipe:
Preheat the oven to 375 and line a 12-cup muffin tin with paper liners, In a large bowl, cream the butter and sugar. Add the eggs, and stir in the milk and vanilla extract. In another bowl, stir the dry ingredients. Stir them into the butter and sugar mixture, then fold in the blueberries. Fill the muffin cups almost to the top and bake for 25 minutes or until light brown. Makes 12 muffins.
